- Rinse cranberries and pull out any that are not firm
- Combine the cranberries with the sugar, water and zest in a sauce pan and simmer over medium heat.
- As berries pop they will break down. It is ok if they have a few lumps.
- Pour into a serving bowl.
- Cool and then cover with plastic wrap.
- Refrigerate over night or for up to a week.
